BBQ Pizza

The sun's out. The guns are out. Now lets combine two of our favourite things together – BBQs and pizza! This is a really fun way to cook pizza and the fiery conditions brings us close to mimicking a wood fired pizza oven.

There are two ways to cook pizza on your BBQ. With a pizza stone and without a pizza stone. One thing you will need is a BBQ with a lid.
Here's how to do it!

BBQ Pizza with a pizza stone:

Gas:

  1. Place a pizza stone on the grates and set the burners beneath to medium-high.
  2. Fire up the grill, covered, with the stone inside. Get the grill super-hot – as close as you can get to 500ºC. This might take around 10 minutes.
  3. Stretch your dough out and add your favourite toppings on top. Brush the crust with a little olive oil.
  4. Open the BBQ lid and carefully slide your uncooked pizza onto the pizza stone.
  5. Replace the cover with vents open and cook until underside of crust is browned and cheese is bubbling, 7–10 minutes.
  6. Move the pizza onto a board. Slice it up and get the next one ready!

Charcoal:

  1. Heat up your charcoal until it's white hot.
  2. Spread the coals around the perimeter of the grill and place the grate on top.
  3. Pop your pizza stone on top of the grill, close the lid and let it all heat up for around 20mins. The closer you can get to 500ºC, the shorter your cooking time.
  4. Stretch your dough out and add your favourite toppings on top. Brush the crust with a little olive oil.
  5. Open the BBQ lid and carefully slide your uncooked pizza onto the pizza stone.
  6. Replace the cover with vents open and cook until underside of crust is browned and cheese is bubbling, 7–10 minutes.
  7. Move the pizza onto a board. Slice it up and get the next one ready!

BBQ Pizza without a pizza stone:

  1. Prepare your BBQ for medium-high, indirect heat (for a charcoal BBQ, bank coals on one side of grill; for a gas BBQ, leave one or two burners off).
  2. Stretch out your dough and place it over the direct heat long enough to see the grill marks and notice the dough beginning to firm up. Around 1min max.
  3. It should easily come off the grill now. Flip it over and leave it on the direct heat for another 45secs or so and then move it onto the indirect heat.
  4. Add your favourite toppings, close the lid and cook for 7-10 minutes, until the dough has browned and the cheese has melted.
  5. Stuff your face and do it again!
